✅ In this class, I will explain the main ingredients in chocolate and nut-based spreads, how these ingredients influence the texture and taste of the final product, and the typical amounts for each ingredient that I use.

✅ Production of spreads doesn’t need a lot of equipment, but I will share what equipment I use.

✅ We will explore storage condition requirements and shelf life expectations. All the recipes in the class are AW tested and offer a long shelf life of at least 9 months.

✅ You will find detailed video instructions for the preparation of 10 different recipes, starting with a more classic spread with chocolate and nuts and moving into a bit more complex recipes with additional fruits, spices, and even cookies.

✅ Additionally, I will share my recipes for making nut praline, caramelized nuts, caramelized milk powder, cookies, beurre noisette, and, of course, how to use these products in spreads.

✅ We will also explore the preparation of a spread with low sugar content (not sugar-free) and one recipe for a vegan (dairy-free) spread.

✅ Spreads can be used as a filling in bonbons or chocolate bars, and I will show you how to fill chocolate bars.

WHAT YOU NEED TO KNOW BEFORE YOU PURCHASE

⚠️⚠️⚠️ You absolutely WILL need a chocolate refiner (melanger) to recreate recipes from this class.
It is NOT possible to recreate the recipes without a melanger.

All the recipes include cocoa products.

In various recipes, I will use different ready-made chocolates (milk, white, caramelized) that can be changed for other brands.
During the class, I will be also using: nuts, sugar, skim milk powder, cocoa powder, coconut oil, lecithin, sunflower oil, cocoa butter, various freeze-dried fruits, coconut milk powder, spices, cane sugar, and cocoa mass.
Maltitol will be used in one of the recipes (can be omitted). Detailed information will be provided during the class.
